The newest iteration of 5×5 Brewing Co., founded in Mission nearly a decade ago by a group of local U.S. military veterans, is a brewpub in Edinburg located between its city hall and the University of Texas Rio Grande Valley.
Local leaders announced the company’s plans outside Edinburg City Hall on Monday to transform a food truck park and event space into a pedestrian-friendly beer garden and restaurant, with live music expected to begin in 2027.
The first phase will be an 8,000-square-foot building expected to cost $2.5 million and support between 25 and 40 new jobs, from manufacturing to retail.
5×5 Brewing Co. has grown its investor base to nine: George Rice, Patrick Costello, Stanley Cummins, Kevin Jackson, Sean Downey, Alex Gelman, Ray Franklin, Cody Mazur, and Juan “Chuy” Hinojosa, the Texas State Senator who invested as an individual about a decade ago.
